Patrick Fernandez has transformed former Post Offices into frozen stalls, where direct arrivals of Quiberon peaches are posed. Sold in whole pieces or filleted on demand, exceptional animals have been rounding up All-Paname for seven years: spine-tingling line squid, spirited wild gilthead sea bream, fine ikejime line bass, and a top selection of shellfish (Icelandic sea urchins, Cancale oysters, etc.). Next door, the Japanese grocery corner stocked by Thi Fernandez, the fishmonger's Japanese wife, makes the link with the catering service: star anise root infusions, olive oil with shiso, chirashi depending on the catch and crazy rillettes tuna.
